Fried Rice with Tuna Fish

Another fried rice again as 1 Dish Meal for dinner during those cookies' baking days.  Do you feel pity for my family?  Perhaps, they may tell me not to bake anymore cookies but I think they won't cos' they too like to eat the CNY cookies.
Simple fried rice with eggs and frozen mixed vegetables, the two main ingredients apart from canned tuna fish flakes.  Serve with a nice sambal belacan it's just as appetising and a complete meal.
Ingredients
[serves 3-4]
4 bowls of cooked rice [adjust according to individual appetite]
1 tin tuna fish flakes - drain away liquid
100 gm mixed vegetables
3 eggs - lightly beaten
1/2 tbsp chopped garlic
3 tbsp oil
1 tsp each of salt and pepper to taste
1 stalk of spring onion - chopped
sambal belacan - optional
  1. Heat up oil in pan, saute garlic until aromatic.  Add in egg and stir fry until almost set.
  2. Add in the cooked rice, seasoning and stir fry over high heat until well mixed.
  3. Add in tuna and mixed vegetables.  Stir to mix and lastly add in spring onions.
  4. Stir well and dish out to serve immediately with sambal belacan or cut red chillies.

Kimmy, I have not tried this before. Now there is canned tuna specially for frying rice. Saw it in the supermarket.

Hi Phong Hong, I used the normal canned tuna. Must look out for the special one, hope they don't add flavours to it, just plain would be good.

this remind me i made this tuna rice before, but i did not fry rice but put tuna directly with rice and cook in rice cooker, a quick verison ^_^

might be simple, but is cheap delicious and makes for a quick stress free dinner! I also always end up doing one-pot meals because there's less washup to do he he.

Hi Sonia, yes quick version to cook with rice. I wanted to add mixed vege and smell the aroma of spring onions, so better way is to fry all the ingredients.

Hi Shu Han, nowadays often hear everybody are busy or tired. Best way to enjoy home cooked food without stress is doing 1 Dish meal especially those that can be prepared ahead and easily available ingredients, hehehe! Are ppl getting lazy or too many commitments??????
